“Chozo” means store, although in this case it really refers to the six-month maturation period, and so NAMA-CHOZO is sake that has been in unpasteurized form, and pasteurized one time only after maturation (usually a six month period) or just before shipping. With carefully selected rice polished to 45%, it’s brewed at lower temperature and longer period. It gently comes out fresh and floral aroma.
